
In Salento, where the tradition of olive crop in very ancient, is located the vast olive groves of Palma Estate. Both the varieties, the traditional one (as Ogliarola leccese and Cellina di Nardò) and the one intensively cultivated (as Leccino and Frantoio) give an excellent oil, mating excellent properties with aureate organoleptic qualities.
From ancient folk legends handed down orally, emerges the character of Nachiru (navigator) a man tempered by fatigue and talented with extraordinary skills of master, who knew that, as on the ship, the courage was determinant for the destiny, the success in obtaining a good oil from the hypogeal mills was a matter of skills and dexterity. Below ground, men and animals lived and worked together throughout the period of olives collection and the production of oil. Only at the end of the season, that is, at Easter, they could re-emerge, see again stars and reopen their hearts to life. Thence the working conditions are greatly changed, the product improved and the fatigue of Trappetari (as were named the persons working on) alleviate but still an old knot takes narrow, in an indissoluble manner, the mesh of this ancient tradition. Extra virgin oil 'Casale Pizzocco' comes after the homonymous farmhouse situated in the countryside of Galatina (Le), dense of majestical, secular olive trees which as taciturn giants, contorted in an animal-like shape, 'tell' so much of their history. The love for this ancient product, which is closely linked to our culture and the respect for a generous nature are the values connoting us. The company, which is situated next to the mill owned by the family, is always projected into the future, thanks to the continuous adjustment of production structure and the updating of management tools. The collection of olives began in October and it is accomplished by mechanical shaking, followed by processing in the mill in order to perform a cold-extraction of the oil. |
